Sheet Pan Quesadillas
A quesadilla can be anything you’d like to be. Traditionally, in a skillet, it’s a heated tortilla with melted cheese, meat or beans, vegetables, and salsa. With this basic method, using a sheet pan and an oven, you can create anything you’d like.

Ingredients

  • This is the basic, foundation recipe:
  • Preheat the oven to 425°
  • Lightly brush a coating of grapeseed, avocado, or canola oil on a sheet pan
  • Place up to six 5” or 6” flour or corn tortillas on the pan
  • Sprinkle approximately ¼ cup of cheese on each tortilla, and place the pan in the oven. 
  • Cook for 5 minutes, or until the cheese has melted
  • Add your toppings to ½ of the tortilla, and fold the other half over the fillings, making half moons
  • Place the pan back in the oven, and cook for 3-5 minutes, or until the edges start to brown

  • Gyro Quesadillas
  • 10 ounces feta cheese
  • 1 tablepoon grapeseed, avocado, or canola oil...see note below
  • 1 pound ground turkey or beef...see note below
  • 2 teaspoons dried oregano...see note below
  • ½ teaspoon cumin...see note below
  • ¼ cup tahini...see note below
  • 2 tablespoons lemon juice...see note below
  • 1 garlic clove, peelt and minced...see note below
  • 1 cucumber (finely chopped)
  • 2 tomatoes (finely chopped)
  • shredded lettuce

  • Semi-Traditional Quesadillas
  • 10 ounces cheddar, or other mild cheese
  • 1 tablespoon grapeseed, avocado, or canola oil...see note below
  • 1 pound ground turkey or beef...see note below
  • 2 teaspooons dried oregano...see note below
  • ½ teaspoon cumin...see note below
  • 1 avocado (thinly sliced)
  • 2 tomatoes (finely chopped)
  • shredded lettice
  • salsa
  • salt
  • pepper

Notes

To cook the ground turkey or beef
  • Place a skillet over a medium high heat. When it's hot, add the tablespoon of oil, and add the ground meat. Add the oregano and cumin, and sprinkle with salt and pepper. Cook until the meat is cooked through, stirring as needed to keep the meat from sticking. Adjust the seasoning as needed
 
To make the tahini sauce
  • Whisk together the tahini, lemon juice, and, garlic. Sprinkle with salt and pepper. If the sauce is too thick to drizzle, thin it with warm water, starting with a teaspoon at a time.
