Silky Tomato Soup
This "creamy" tomato soup, which is so tasty, is also a vegan treat. It's great all year round, but especially so when local tomatoes and basil make it even better!

Ingredients
- 1 tablespoon olive oil
- 1 onion (peeled and diced)
- 2 garlic cloves (peeled and cut in half )
- 2 tablespoons tomato paste
- 3 pounds fresh tomatoes (core removed, and chopped)
- 2 cups vegetable stock
- 8 ounces silken tofu
- 1 cup fresh basil, (sliced and divided)
- salt
- pepper
Instructions
- Place a small stockpot over a medium heat. When the pot is hot, add the olive oil, then the onion. Sprinkle with salt and pepper. Cook until the onions are slightly golden and starting to cook, approximately 5 minutes. Add the garlic, and stir until fragrant, approximately 30 seconds
- Mix in the tomato paste, and cook for 30 seconds. Stir in the chopped tomatoes, and cover the pot. Simmer for 5-10 minutes, until liquid is coming from the tomatoes and they’re cooked down a bit
- Mix in the stock and tofu. With an immersion blender, regular blender, or food processor, puree the mixture until smooth. Mix in ¾ the basil, and simmer for another 5-10 minutes
- Adjust the flavor with salt and pepper, as needed
- Serve immediately, using the remaining basil as a garnish
