Thai Peanut Sauce

2 tablespoons vegetable oil

6 garlic cloves, peeled and minced

1 small onion, peeled and minced

1 16 oz jar all-natural peanut butter (no sugar added)

1 ½ cups chicken or vegetable stock

1 14 oz can coconut milk

¼ cup lemon juice

¼ cup soy sauce

2 tablespoons honey or agave (or more, to taste)

cayenne pepper or Tabasco (or other hot sauce), to taste

  1. Heat a saucepan, over a medium heat. When it’s heated, add the oil, then add the onion. Sautee for five minutes, or until the onions start to cook through. Don’t let it get browned. Add the garlic, and sauté for 30 seconds, or until it’s fragrant
  2. Add the remaining ingredients, except the honey and cayenne pepper, and bring to a simmer, stirring regularly. When the sauce has thickened, 5-10 minutes, adjust the seasoning with the cayenne pepper and honey
