Ingredients
- 1½ cups vegetable stock (or chicken stock)
- 4 teaspoons corn starch
- 8 ounces mushrooms (ends trimmed and thinly sliced. White, baby Bella, or any kind you’d like)
- ¼ cup water (may not be needed, but have it ready)
- ½ cup Marsala wine (divided. More may be needed)
- 2 tablespoons olive oil (divided)
- 1 pount extra firm tofu (patted dry, cut into 1-inch slices, then cut corner-to-corner into triangles )
- 1 teaspoon Aleppo pepper
- 1 pound asparagus (ends trimmed and cut into 1” pieces)

Instructions
- In a bowl, whisk together the stock and corn starch, until it’s thoroughly combined and no corn starch lumps remain. Set this aside
- Place a large skillet on the burner. Add the mushrooms, and sprinkle with salt and pepper. Cover, and turn the heat to medium-high. The mushrooms will start to cook after 2-3 minutes. If they’re dry, add the water, and continue to cook. After another minute, add ¼ cup marsala. When the mushrooms are cooked through, approximately 3-5 minutes more, set them aside into a bowl, and return the pan to the burner. Reduce the heat to medium
- Add one tablespoon of olive oil to the pan, and arrange the tofu in the pan. Sprinkle the top with salt and Aleppo pepper. When the bottom is browned, turn over the tofu, and brown on the other side. Remove from the pan
- Whisk the stock mixture again, to remove any residual lumps. Add ¼ cup (approximately) of the stock mixture to the pan, and scrape up any residual stick bits in the pan with a wooden spoon. Add the remining stock mixture, with ¼ cup marsala, the mushrooms and asparagus, and bring to a light boil. Reduce the heat to low, and simmer for 2-3 minutes, or until the asparagus is almost cooked through
- Adjust the sauce’s flavor, as needed, with Marsala, salt, and/or Aleppo pepper
- Carefully, to prevent it from breaking, add the tofu back into the pan. Warm this through, and serve
- Serve with pasta or mashed potatoes
Notes
Note: If your asparagus bundle weighs more than 1 pound, even up to 1 ½ pounds, that’s fine
