
Tofu Teriyaki
I rarely say a dish is easy to make. This one is. It's also fast to prepare (I rarely say that, either). But it's one of those dishes that has you thinking "Restaurant!" It's a keeper. And plant-based. And gluten free!

Ingredients
- 1 pound extra firm tofu (torn into bite-sized pieces)
- 1 teaspoon vegetable oil (any neutral oil, such as grapeseed, avocado, or canola)
- 3 teaspoons sesame oil (divided.Toasted or untoasted sesame oils work well)
- 2 tablespoons corn starch
- 2 teaspoons corn starch
- 2 tablespoons water
- ¼ cup tamari (or soy sauce. Reduced sodium works well too)
- ½ cup water
- 1 tablespoon fresh ginger (peeled and grated)
- 2 tablespoons agave (or brown sugar)
- 2 tablespoons toasted sesame seeds (untoasted will also work)
Instructions
- Preheat the oven to 425°, and set aside a sheet pan (with sides) and cover with parchment paper
- Crumble the tofu into bite-sized pieces, and place it in a bowl. Add the oil and 2 teaspoons of sesame oil, and gently mix this with a spatula. Add 2 tablespoons of cornstarch, and gently mix this with a spatula until it’s coated
- Spread the crumbled tofu onto the sheet pan, and bake for 20-25 minutes, turning every 10 minutes. Bake until the tofu has a golden color
- In a small bowl, whisk together the 2 teaspoons of corn starch, and 2 tablespoons of water. Whisk until the mixture is smooth. Set this aside
- In a medium-sized skillet, add the tamari, ½ cup of water, ginger, 1 teaspoon of sesame oil, and agave. Place this on the stove, but don’t turn it on yet
- After the tofu has been in the oven for 15-17 minutes, turn the tamari mixture heat to medium-high. When it comes to a simmer, whisk the corn starch and water mixture again, to remove any remaining lumps. Add this to the tamari mixture and gently whisk until it thickens, 10-30 seconds. Remove this from the heat and cover
- When the tofu is done cooking, mix it into the tamari mixture (now it’s teriyaki sauce!). Mix in the toasted sesame seeds, and serve with rice
