Lemon Rice with Ginger

1 cup jasmine rice uncooked

2 cups chicken stock

1 ½” (approximately) fresh ginger, peeled and grated

zest of two lemons

salt and pepper to taste

  1. Add the rice, stock, ginger, and lemon zest to a saucepan and bring to a simmer. Simmer for 17-20 minutes, or until the rice is cooked

Yield: Approximately 3 cups, or 4 servings
