Raspberry Amaretto Sauce

adapted from The New Basics Cookbook

1 12 oz bag frozen raspberries, thawed

1/3 cup confectioners sugar

2 tablespoons Amaretto or rum (optional)

  1. Put all of the ingredients into a blender, or food processor, and process until smooth. Adjust the flavor to your liking. Add more sugar or Amaretto, if desired
  2. With a spatula, press the sauce through a strainer to remove the seeds.  Serve chilled, or at room temperature.

Makes approximately 1 ½ cups
