Salmon with a Parmesan Herb Crust

1 1⁄2 pounds salmon fillet 1-2 tablespoons olive oil salt

1⁄4 cup parsley, finely chopped 1⁄4 parmesan cheese

Preheat the oven to 450°

  1. Combine the salmon, olive oil, and a generous sprinkle of salt and pepper
  2. Cover a sheet pan with parchment paper, and place the salmon on it. Bake this for 10 minutes
  3. While the salmon is cooking, combine the parsley and parmesan. You can do this a few hours ahead of time
  4. After the salmon has cooked for 10 minutes, remove from the oven, and cover it with the parmesan mixture. Continue to cook for 3-5 minutes longer, or until the salmon is cooked to your liking

Yield: 4 servings

NOTE: It’s fine if you don’t have parchment paper. This just helps prevent the salmon from sticking to the pan
