Salmon with Lime and Cilantro

1⁄2 cup cilantro leaves, finely chopped 1 garlic clove, chopped
zest of one lime
2 tablespoons lime juice

1 tablespoons olive oil 1⁄2 teaspoons salt
1 1⁄2 pounds salmon fillet

Preheat the oven to 450°

  1. Combine all of the ingredients in a bowl, except the salmon
  2. Add the salmon to the mixture, and cover it well
  3. Cover a sheet pan with parchment paper, and place the salmon on it
  4. Cook for approximately 12-14 minutes, or until the salmon is cooked to your liking

Yield: 4 servings

NOTE: It’s fine if you don’t have parchment paper. This just helps prevent the salmon from sticking to the pan
