Mediterranean Fried Rice

Ingredients

  • 2 tablespoons olive oil (divided)
  • 4 links sweet Italian sausage (either cooked or uncooked)
  • ½ onion (piled and minced)
  • ½ red pepper (minced)
  • 2 garlic cloves (peeled and minced)
  • 1 teaspoon dried oregano
  • 1 zucchini (cut into small dice)
  • 1 yellow squash (cut into small dice)
  • ¼ teaspoon red pepper flakes (optional)
  • 2 cups cooked rice (brown or white rice, cooled to room temperature or chilled. Approximately ¾ cup before cooking)
  • 2 tablespoons balsamic vinegar (plus extra as needed)
  • cup feta cheese (crumbled)
  • 2 tablespoons fresh basil (or parsley, for garnish)

Instructions

  • Place a large skillet over a medium-high heat. When it’s hot, add 1 tablespoon of oil, and then the sausages. If the sausages are pre-cooked, just cook them until they’re browned and warmed through, and remove from the pan and set aside. If the sausages are uncooked, cook them through, and remove from the pan
  • Reduce the heat to medium, and add the remaining tablespoon of oil. Then add the onion and pepper, and cook for 3 minutes, or until they start to brown. Add the garlic and oregano, and cook until fragrant, around 30 seconds
  • Add the zucchini and summer squash, and cook for 2-3 minutes, or until they begin to soften
  • Turn the heat to medium high, and add the rice. Stir until the clumps of rice are broken up
  • Stir in the sausage. Add the balsamic vinegar, or enough to taste. 
  • Stir in the feta cheese, and garnish with basil or parsley before serving
