Savory Spinach Soufflé
This soufflé is so simple. You don't have to whip up the egg whites, or heat the milk for the béchamel. And it's fantastic!

Ingredients

  • 3 tablespoons unsalted butter (plus extra for the pan)
  • 3 tablespoons flour
  • 1 ¼ cups milk (cold)
  • teaspoon ground nutmeg (a pinch)
  • 2 cups fresh spinach leaves (approximately 1 oz)
  • 4 ounces Gruyere (grated, or other cheese. Approximately 4 oz)
  • 4 eggs (slightly beaten)
  • 1 cup corn (cooked, approximately 2 ears)
  • salt

Instructions

  • Preheat the oven to 400°. Grease a pie plate, or an oval gratin dish (3-4 cup size) with butter. Set aside
  • In a medium-sized saucepan, over a high heat (yes, a high heat), melt the butter. Whisk in the flour, until it’s combined and sizzling
  • Whisk in the cold milk, and bring to a boil, whisking the whole time so it doesn’t stick as it thickens. Boil for around 20 seconds, while continuously whisking
  • Sprinkle with salt, pepper, and the nutmeg. Remove the pan from the heat
  • With a wooden spoon, add the spinach, and stir briefly, until the spinach starts to wilt. Add the cheese, and thoroughly combine. Stir in the corn
  • Add the eggs, and mix well. Pour into the prepared pan, and place in the oven over a sheet pan, to catch messy spillovers
  • If you’re using a pie plate, bake for approximately 30 minutes, If you’re using a gratin dish, bake for 35-40 minutes. It will be ready when it’s puffed and browned
  • Serve immediately with a crusty baguette, salad, and the beverage of your choice

Notes

NOTES:
This dish is so flexible. For instance:
  • use cooked, fresh spinach (use approximately 3 cups) by putting it in a preheat medium skillet, over a medium high heat, with a bit of olive oil added first. Stir it, and it will wilt and reduce in 1-2 minutes. It’s now ready to be added before you add the cheese
  • instead of corn (or in addition to it), you can add other cooked vegetables, including onions, peppers, mushrooms, or other cooked vegetables you might have on hand
  • other cheeses work well, including cheddar, havarti, edam, gouda, etc.
