Tzatziki
This Middle Eastern sauce is perfect to accompany seafood, lamb, cheeses, and just about anything that needs the addition of a fresh oomph

Ingredients
- 2 cups yogurt (strained. See note below)
- 1 English cucumber (or 3 Kirby cucumbers, peeled, seeded, and finely chopped or grated)
- 2 garlic cloves (peeled and mashed to a paste, or crushed in a garlic press)
- 2 tablespoons fresh dill (or mint, chopped)
- 1 lemon (zest only)
- 1 tablespoons olive oil (optional)
- salt
- pepper
Instructions
- Strain the yogurt for 2-4 hours (see note below)
- Mix together the strained yogurt, cucumber, garlic, dill, and lemon zest. Sprinkle with salt and pepper
- Add in the olive oil, if desired
Notes
Straining yogurt:
- In a bowl, mix together the yogurt and ¼ teaspoon salt
- Place the yogurt into a double layer of cheesecloth, a tea towel, or an ultrafine mesh strainer
- If using cheesecloth or a tea towel, place it in a strainer or colander, and cover with plastic wrap. Place in a bowl so the strainer doesn’t touch the bottom
- If using an ultrafine mesh strainer, cover with plastic wrap. Place in a bowl so the strainer doesn’t touch the bottom
- Chill in the refrigerator for 2-4 hours
