Tzatziki

Ingredients

  • 2 cups yogurt (strained. See note below)
  • 1 English cucumber (or 3 Kirby cucumbers, peeled, seeded, and finely chopped or grated)
  • 2 garlic cloves (peeled and mashed to a paste, or crushed in a garlic press)
  • 2 tablespoons fresh dill (or mint, chopped)
  • 1 lemon (zest only)
  • 1 tablespoons olive oil (optional)
  • salt
  • pepper

Instructions

  • Strain the yogurt for 2-4 hours (see note below)
  • Mix together the strained yogurt, cucumber, garlic, dill, and lemon zest. Sprinkle with salt and pepper
  • Add in the olive oil, if desired

Notes

Straining yogurt:
  1. In a bowl, mix together the yogurt and ¼ teaspoon salt
  2. Place the yogurt into a double layer of cheesecloth, a tea towel, or an ultrafine mesh strainer
    1. If using cheesecloth or a tea towel, place it in a strainer or colander, and cover with plastic wrap. Place in a bowl so the strainer doesn’t touch the bottom
    2. If using an ultrafine mesh strainer, cover with plastic wrap. Place in a bowl so the strainer doesn’t touch the bottom
  3. Chill in the refrigerator for 2-4 hours
